Mock "Egg Salad" chickpea/garbanzo salad (vegan and gluten free)

cooked chickpeas pulsed in a food processor til broken down into pieces but not into mush

scallions or shallots

red cabbage

shredded carrots

chopped cilantro or other herb of choice

any other  finely chopped veggie  you choose

brocolli

bell peppers

celery

lettuce chopped fine (like herbs)

Vegenaise

Mustard

Hot Sauce

Red Wine Vinegar

sea salt and pepper to taste
