GFCF Waffles (egg free)

I use Arrowhead Mills GF Baking Mix for these . There are a little more dense than the egg waffle that follow, but they are very tasty and these are best eaten when made are not good to freeze/reheat.

1 cup Arrowhead Mills GF Baking Mix
1 egg or egg substitute (I use Ener-G egg replacer)
1/2 cup water (I use rice milk)
1/8 cup canola oil (I use extra light olive oil)
1 TBSP honey(I use honey or maple syrup)

Stir til just mixed. Grease waffle iron and ladel on batter bake for 3 -4 minutes.

I also sometimes add 1/2 tsp cinnamon, 1/2 tsp nutmeg, and 2 TSBP brown sugar to make "Spice Waffles" I serve these with powdered sugar like a donut.

GFCF Waffles (uses eggs)

Can freeze these and toast up later. These are EXCELLENT! Modified from
"No Wheat No Way!"

In a large bowl mix

1 and 1/4 cups rice flour (I use brown)
1/4 cup potato starch
1 TBSP baking powder
1/2 tsp salt

then stir in

1 and 1/2 cups dairy free milk(I use rce milk)
2 egg yolks
1/4 cup veg oil (I use extra light olive oil)
1 and 1/2 TBSP sugar(optional, but I like the sweetness)

in another bowl beat the 2 egg whites til stiff and fold in to the rest of the batter, it's OK to have little lumps of egg white just make sure they're very small.

Grease waffle maker. Ladel batter on to waffle maker. Bake 3-5 minutes(ignore the waffle iron's automatic timer itf it has one)

Serve with your favorite fruit, or make a fuit puree in the food processor add a little honey or agave if desired to sweeten the fruit. Enjoy!
